Specialty Coffee at Hotel Sauce

At Hotel Sauce we love coffee. And because we love it and want to always offer our guests the best, in our cafeteria we serve Specialty Coffee. An excellent and exclusive coffee that you can only taste here.
We serve it in our cafeteria prepared however you like and every morning at brunch and breakfast.

Do you know what specialty coffee is?
Specialty coffee is 100% Arabica coffee of excellent quality that is distinguished by its aroma, flavor and personality.
It is a coffee whose origin is clearly indicated. All the beans come from the same farm and it is respectful of the land and the farmers because it is grown following traditional methods and the price is higher given its quality.
It is a coffee harvested by hand, at its ideal moment of maturation, making several passes and discarding the defective beans, which allows us to obtain a cup of coffee without defects. Therefore, specialty coffees have to obtain a cupping score of more than 80 points according to the SCA cupping.
The roasting is recent, in small batches and enhancing its best characteristics. Our trusted roaster, Guido Buitenhuis, roasts Papa Largo coffee every two weeks, adapting the roasting to the delicate characteristics of our coffee.
In addition, it is a healthier coffee, because by having a less aggressive roasting, it retains its antioxidant and anti-inflammatory properties. And it has less caffeine than commercial coffees.
Iberital Vision Coffee Maker
And we prepare all our espressos with the latest generation Iberital Vision coffee maker that controls the pressure, temperature and time to obtain the best cup of coffee.
An internationally awarded machine, with an avant-garde design and an elegant combination of technology and functionality. All of this translates into a more sustainable and healthy cup of coffee.
More ecological because it manages to minimize its CO2 footprint and reduce energy consumption by up to 50%.
Healthier because it obtains water directly from the supply network, improving the quality of the coffee. In addition, the use of special alloys prevents the presence of metallic impurities in the water.
In addition, we instantly grind the coffee in Mahlkönig grinders, adapting the grinding to the preparation we are going to make.

Specialty coffee to your liking in three varieties
If you visit our cafeteria and ask us for an espresso, a latte or a cappuccino, you should know that the coffee you are going to enjoy is an exclusive specialty coffee that you will only find here. A coffee always freshly roasted (You can check the roasting date on each package) by our trusted master roaster Guido Buitenhius. And a coffee that you can enjoy in three varieties. Three exceptional coffees so you can enjoy an expresso, a filter coffee or a decaffeinated coffee of the highest quality.
Papá Largo for espresso coffee maker
This coffee comes from the Fazenda Irma Pereira farm, south of Minas Gerais, Brazil, where specialty coffees grow.
The farm is run by Rodolfo Henrique Vieira Ferreira and its 130 hectares are dedicated to the production of exquisite coffees, the preservation of the environment and the social development of the area. The coffee is harvested by hand at the optimal ripening moment of each bean and classified according to its size. It is then separated from the pulp on the same day it is harvested to avoid possible fermentation. This process is known as Pulped Natural Process.
It is then left to dry carefully on the patio for a few days and finally placed in the mechanical dryer. The coffee then rests for 45-60 days and is classified to eliminate defects.
With this collection system we obtain beans rich in flavor and sweet aromas. You can play with us to find the flavor notes, such as raisins, nuts, dark chocolate or cane sugar.
Papá Largo for filter coffee maker
In the filter coffee maker version we have chosen a coffee from the Yirgacheffe region in Ethiopia. Naturally it is a 100% Arabica coffee, grown at between 1800 and 2100 meters above sea level, always in small plots and in the shade of small banana plantations. The fruits are harvested by hand and the plants are fertilized with natural organic matter. The production system is horticultural and the farmers live very close to the plantations.
This results in a coffee with a very intense aroma and a very elegant flavor. This coffee has a medium citric acidity combined with a good body and balance in the cup with spicy and floral elements. You can discover aromas and flavors such as jasmine, peach or lemon. It is a very clean coffee with a very long and pleasant finish.
Our trusted master roaster roasts these coffee beans every 2 weeks, specifically for optimal results in filter coffee makers. He enjoys a unique coffee, discovers the flavors and aromas of the mountains of Ethiopia and recovers the nuances that are only obtained in a filter coffee maker with the best specialty coffee.
Decaffeinated Long Dad
Papa Largo Specialty Coffee is also available in decaffeinated format. For this variety we use a specific coffee, grown in Marcala, Honduras, at an altitude of 1,400 meters. All decaffeinated Papa Largo coffee comes from the same farm, in Beneficio de Los Castaños and is of the Caturra variety. It has aromas of peach, chocolate and honey and you may be able to perceive a soft flavor of hazelnuts. And, naturally, it’s caffeine-free.
Have you ever wondered how to remove caffeine from coffee? There are different methods to extract it. Depending on the method used, the flavor we obtain is more or less bitter, since caffeine is one of the components that most enhances this nuance.
For decaffeinated Papa Largo Coffee, the Swiss Water process is used. This technique is completely natural, it does not use chemicals to extract caffeine, only water. In this way all the organoleptic properties of the grain are preserved.
Because drinking decaffeinated coffee is not at odds with enjoying the best specialty coffee.
The specialty coffee at Hotel Sauce is news Heraldo de Aragón
We have been able to read an article in the gastronomic supplement of Heraldo de Aragón Con Mucho Gusto about Specialty Coffee. As you know, for a few months now in our Mi HABITACIÓN favorita café, we have been serving our own specialty coffee Papa Largo. A very special coffee because of everything that lies behind each cup.
This article talks, naturally, about Long Daddy and Mi HABITACIÓN favorita. We share with you a few lines from the publication.
Behind specialty coffee there is effort, a product that is well grown, well transported, stored, roasted and, finally, produced,” explains Ezequiel Garcés, the brand’s roaster. Luis Fernández from Saragossa agrees, from the Sauce hotel where, in his cafeteria, Mi Habitat Favorita, they have just launched their own brand of specialty coffee called Papa Largo: “Specialty coffee implies total control of the product, from the origin to the table”. Traceability is total because it is known which farm the grains come from; There is a prior screening at origin, there is respect for the processes, in which the machine used is very important. For this reason, Luis believes that “it is important that the coffee machine is your property, that you know its mechanics, that the owner himself maintains it and knows perfectly how it works.” “It’s an investment and it’s a challenge,” he says.
This attention to detail also has its risks. “In the world of specialty coffee there are many critical points,” warns Luis Fernández. Because there are many variables that come into play. “A wine comes out good and then you just have to pour it into the glass, but in the case of coffee, you can have the best green beans and end up poorly roasted, or achieve the best roast and ruin it by heating the water too much in the machine,” he lists. . “Excellence is sought in specialty coffee,” he summarizes…
For Luis Fernández, specialty coffee in Saragossa is in a phase of “explaining, teaching, raising awareness and so that it can have an impact on the price.” And he warns: “Establishments that serve commercial coffee also suffer a lot because there is very little margin in the price”…
In any case, for Luis Fernández specialty coffee “is positive for sure, because it reveals that people care about what they consume, that there is more knowledge and desire to know”
